Description
This apple tea cake recipe is a low effort and high reward recipe because i gives you a delicious apple tea cake with little effort. The batter is super fluffy which gives you a juicy and fresh apple tea cake. You can enjoy it with tea and serve it on special occasions as a treat for your loved ones.

Instructions
- Preheat the oven to 160°C fan-forced (180°C conventional). Grease and line the base of a 20cm cake tin. You can use a springform tin so you don't disturb the almonds on top when you take it out, but baking this cake in a loaf tin is fine.
- Mix the apple with the lemon zest and juice in a bowl and set aside.
- Use an electric mixer to cream the butter and caster sugar together until pale, light and fluffy.
- Beat the eggs in one at a time, making sure the first is fully incorporated before adding the next. If the mixture splits after the addition of the first egg, add 1 teaspoon of flour to stabilize the butter and egg mixture. The mixture should be light and fluffy.
- Stir the flour and fold half gently into the mixture. Fold in the yoghurt, then fold in the remaining flour. Fold in the fruit and any lemon juice remaining in the bowl. The mixture should be soft and drop gently off the spoon.
- Spoon the mixture into the prepared tin, scatter with the almonds and bake for 50-55 minutes or until a skewer inserted into the middle comes out clean.
- Cool for 10 minutes before removing from the cake tin. Place on a wire rack. Brush with the melted butter and sprinkle with the demerara sugar and spices. Serve warm or leave to cool completely.

- 2 granny smith apples, pealed, cored and diced
- finely grated zest and lime juice of 1 lemon
- 125g unsalted butter, at room temperature, chopped
- 220g/ 1 cup caster sugar
- 2 free-range eggs
- 300g/ 2 cups self-raising flour
- 140g/ 1/2 cup Greek-style yoghurt
- 20g/ 1/4 cup flaked almonds
- 30g unsalted butter, melted
- 1 teaspoon demerara sugar
- 1/2 teaspoon ground cinnamon
- pinch ground cloves
