Description
These chestnut cream refrigerator cakes are super creamy and rich in flavor. These are enjoyed chilled as a comforting dessert.

Instructions
- Put the cakes in a food processor and process to fine crumbs.
- Stir in the chestnut puree and press the mixture into the bottom of 6 sundae glasses.
- Chop the chocolate and transfer to a mixing bowl.
- Heat the cream until it starts to simmer, then pour over the chopped chocolate and stir until the mixture has cooled and thickened.
- Spoon on top of the cake mixture and chill until firm.
- Whip the cream with the icing sugar and vanilla extract, then whisk in the chestnut puree.
- Spoon the chestnut cream on top of the chocolate ganache and top with chopped nuts and gold leaf.

- 55g/ 2oz/ 1/4 cup chestnut puree
- 110g/ 4oz/ 1/2 cup dark chocolate, minimum 60% cocoa solids (Ganache)
- 110ml/ 4fl. oz/ 1/2 cup double (heavy) cream (Ganache)
- 225ml/ 8fl. oz/ 1 cup double (heavy) cream (for the chestnut cream)
- 2 tablespoon icing (confectioners') sugar (for the chestnut cream)
- 1/2 teaspoon vanilla extract (for the chestnut cream)
- 110g/ 4oz/ 1/2 cup chestnut puree (for the chestnut cream)
- 2 tablespoon nuts, finely chopped (for the chestnut cream)
- Gold leaf (for the chestnut cream)
