Description
This walnut and banana bread recipe is a comforting dessert that can be enjoyed with tea or coffee. This recipe has a combination of nutty walnut crunch and softness of natural banana texture. You can eat it as a breakfast, mid-day snack or at tea time.

Instructions
- Preheat the oven 160°C fan-forced (180°C conventional). Grease a 21cm x 11cm x 6.5cm, 7 cup or 1.75 liter capacity loaf tin and line it baking paper, extending over the two long sides.
- Place the walnuts in a small saucepan and cover with water. Bring to boil over high heat. Drain into a colander. Return the walnuts to the saucepan, cover with fresh water and repeat. Drain the walnuts and place on paper towels to dry thoroughly.
- Chop the walnuts finely (or alternatively, pulse in a food processor to achieve the same effort).
- Prepare a large bowl of iced water (about 2 cups ice cubes and 1/2 cup water). Heat the butter in a saucepan over medium heat until the butter begins to smell nutty and turn a light golden brown color. Remove from the heat and immerse the base of the saucepan in the iced water. When the butter as cooled slightly, remove the pan from the ice and set aside.
- Sift the flour, salt and bicarb of soda in to a bowl and set aside. Place the eggs and sugar in a large mixing bowl and whisk vigorously until pale and creamy. Add the banana and honey and stir until well combined. Mix in the sifted flour and bicarb, then fold in the melted brown butter a little at a time. Lastly add the walnuts and chocolate buttons and stir through.
- Pour the mixture into the prepared tin and pop into the oven for 45 minutes or until a skewer inserted into the centre comes out clean. Leave in the tin for 10 minutes, then turn out onto a wire rack to cool.

- 225g/ 1 1/2 cups plain flour
- 1/2 teaspoon fine sea sat
- 1 teaspoon bicarbonate soda
- 2 free-range eggs
- 225g caster sugar
- 3-4 over-ripe bananas, mashed (to yield 350g)
- 1 tablespoon honey
- 100g dark chocolate buttons (60%)
